In terms of its nutritional properties, flan is made from milk and eggs. For this recipe, we have decided to use skim milk because we want to make sure it is low in calories.

It is important to note that although skimmed milk is rich in calcium and iodine and has the same content of lactose and sugar as whole milk, it still loses its content of vitamins A and D in the process of removing fat. If you want your flan to contain these vitamins, use whole milk.

Eggs are nutritious. They contain high quality proteins and monounsaturated fatty acids. They also contain vitamins A, B vitamins (B2, B3, B12 and folic acid), phosphorus, iodine and selenium.

We decided to use ricotta cheese instead of condensed milk and stevia instead of sugar to reduce calorie content and make it a dessert suitable for diabetics. If you want, you can of course replace stevia with sugar.

Ingredients for flan napolitano for 10 people

  • 6 dl skimmed milk
  • 3 dl ricotta
  • 5 eggs
  • 1 tablespoon stevia
  • 2 tablespoons vanilla extract
  • Vegetable oil (the required amount)

Ingredients for the caramel

  • 50 grams of sucralose
  • 3 tablespoons water
  • A little lemon juice

Preparation of flan napolitano

  1. Preheat the oven to 175 ° C.
  2. Mix skim milk, ricotta cheese and stevia with a hand mixer.
  3. When you get an even mixture, add vanilla extract and stir again. Set it aside.
  4. Prepare the caramel. To do this, put a saucepan over low heat and melt the sucralose. Stir until it changes color to a sandy color. Turn off the heat and add water and  lemon juice. Stir constantly.
  5. Grease the mold with vegetable oil.
  6. Pour the caramel and then flan napolitano into the mold.
  7. Cover it with foil and prepare a water bath in the oven. Pour the water into a tray until you can cover 1/3 of your flan and then place your flan in it.
  8. Bake for about an hour at 175 ° C. Make sure that the water does not evaporate. If it does, then add more.
  9. Stick in your flan with a toothpick. If it comes out clean, then your flan napolitano is ready.
  10. Let it cool so you can slowly take it out of the mold.

Some ideas

  • You can use almond milk instead of skim milk (the same amount).
  • Decorate your flan napolitano with all kinds of fruits: Strawberries, cherries, blackberries… Whatever you want!
  • If you like  dulche de leche,  pour a tablespoon of it over your flan!
  • You can replace ricotta cheese with condensed milk. However, you should know that this increases the calorie content because condensed milk contains a lot of sugar.
