  • 2 dl whipping cream (low fat is ok)
  • 5 eggs
  • 1 dl sugar

Are you ready? Super! The first thing you need to do to make your homemade lemon pie is to cook the bottom.

How to make the bottom

Separate an egg white from the egg yolk. Save the whites for the meringue stuffing later, and whip the yolk in a bowl along with two tablespoons of cold water.

Then put the flour in a large bowl and add the butter, cut into cubes.

Mix the flour and butter together with clean, dry hands until it becomes an even mixture. If the butter has become too soft, put it back in the fridge for about five minutes.

Add egg yolk to the dough and mix it in until you get a smooth mass. Then shape the dough into a ball and wrap it in the kind of plastic wrap you normally use for storing snacks or freezing food. Put the ball in the fridge for 45 minutes.

While the dough cools down, you can spread some extra flour out on the kitchen table or on another smooth, hard surface. When the 45 minutes have passed, take the dough out of the fridge and roll it out with a rolling pin.

If you notice that the dough is starting to crack or has become too soft, add an extra pinch of flour and roll it in. When you have a thin layer of dough, press it into a pie dish that is either of nonstick material or previously been smeared with a little butter or cooking spray. Press the dough firmly and leave a little of the edge sticking out over the mold, so that there is room for more filling.

Place the pie tin in the refrigerator while preheating the oven to 350 degrees, about 10 to 15 minutes. Once preheated, bake the pie base in the oven for 20 minutes.

And now for the pie filling. Shake the peels from the lemons and put them in a small bowl. Squeeze the juice from them into a medium bowl.
